Family Friendly Recipes:
Easy Beef Curry

A really tasty and economical meal, ideal for mid-week due to the short preparation time.

Preparation Time: 10 mins
Cooking Time: 30 hours
Serves: 4

Ingredients:

500g minced beef
1 chopped onion
1 clove garlic
1/2 teaspoon chilli powder (more or less to taste)
1 teaspoon turmeric
1 teaspoon dry ginger
1 teaspoon cinnamon
1 teaspoon dried coriander leaf
2 medium potatoes, peeled and diced
250g frozen peas and/or beans
250g peeled and chopped carrots
Naan bread or rice to serve

 

 

Instructions:

  1. Fry the minced beef and chopped onion in a deep frying pan using a little oil if needed.
  2. Add the garlic and spices and fry for a further minute or two.
  3. Add the frozen and chopped vegetables and fry for a further minute or two.
  4. Add the coriander and 250ml water.
  5. Simmer for 20 minutes with a lid on.
  6. If necessary, remove the lid and reduce the liquid to slightly thicken it.

Alternative method:

Substitute a jar of your favourite curry sauce for the garlic, spices and coriander.
