Steak with Onion Sauce

Serves: 2 Ingredients:
Lean beef rib-eye, sirloin or rump steak
25g butter
1tsp oil
1 large onion
1tsp balsamic vinegar
Stock cube
French stick
25g cheddar cheese, grated |

Instructions:

Heat the butter and oil in a pan. Cook two beef rib-eye steaks according to preference (see above). Add one onion, sliced, for the last 2-3 minutes of cooking time. Once cooked, remove steaks from the pan and keep warm.

Add 1tsp balsamic vinegar, ½ stock cube, and ¼pt water, bring to the boil and simmer for 2-3 minutes until reduced by about half. Return the steaks to the pan, add 4 slices of the French stick and sprinkle the bread with 25g cheddar cheese.
Tip:
Serve the steak and sauce with potato and celeriac mash or spinach mash (just stir spinach through the steaming mash to wilt slightly) and seasonal green vegetables.
