TV chef backs value cuts
Tastier, easy to cook and cheaper!
Celebrity chef Hugh Fearnley-Whittingstall, well known for his support of fresh, local produce is one of many celebrity chefs promoting the option of cheaper cuts of meat without compromising on quality.
During his Channel 4 TV series, he highlighted lamb breast, lamb neck and pork belly as cheaper cuts of meat that all offer excellent value for money. He urged his viewers to revisit these widely forgotten "cuts of meat that our grandparents loved" due to their outstanding flavour.
Hugh rates breast and belly as amongst his favourite dishes due to their flavoursome taste and the fact that they can be slow cooked with relatively little preparation and excellent results.
Lamb breast, lamb neck and pork belly are all cuts that are experiencing a resurgence in popularity as customers search for products that make their pound stretch further.
“Many of these cuts are easy to cook and your High Street butcher will be only too pleased to offer advice and cooking tips," said Stephen Agar of Three Dales – quality local meat suppliers.
"People are finding alternative cuts are every bit as delicious and easy to prepare as higher-priced cuts, and in doing so they are going back to lovely traditional family recipes.
"If you buy quality meat like Three Dales you're not only assured of value but also that the meat will be locally raised and packed with nutrition and taste. Your local butcher is also best placed to give you tips on how best to choose, prepare and cook your chosen cut, especially if you want to try something new."
